Often times, it's useful to think of cooking high level. You can easily get bogged down in the individual steps of a recipe while missing the global picture.
I'm part of the Food and Agriculture Club at MIT, and earlier this semester, I taught a vegetable cooking class to teach my fellow hungry college students how to make vegetables delicious. You can find photos of the event on the Food and Agriculture Club site.
We made a lot of food, and if you consider all of the steps, it probably seems like black magic. However, the general technique for cooking vegetables (or really anything) is simple:
- Cut vegetables into small pieces.
- Apply heat.

In practice, we went over 4 easy methods for cooking vegetables, and we ended up making 7 different recipes. If you look at the individual steps for such a process, such as the vegan meal plan, it seems insane. If you lump the steps into categories, you'll get a much better understanding for cooking as a whole.
4 Methods for Cooking Vegetables
- tomato stir-fry
- zucchini stir-fry
- coconut sweet potato curry with spinach
Boiling or steaming vegetables, such as for mashed potatoes is also easy, but we didn't get to it because the green beans were moldy. This happened because the green bean bag was too moist. Lesson learned: store your vegetables with paper towels.
Cooking often seems impossible and daunting because there are lots of fancy things you can make with vegetables that generally involve combining a few of this methods, more ingredients, love, and magic. For example, consider ratatouille - you have to blanch tomatoes, salt eggplant (please just microwave it), and simmer for an hour. For the average person, if you remember to cut and heat your food, you'll do just fine.
