Instead of having to wash a separate bowl, you can crack eggs directly into the pan to make lazy scrambled eggs. Lazy scrambled eggs have distinct streaks of egg yolk and egg white, which provides some textural contrast.
Lazy Scrambled Eggs
Pair a couple of eggs with tomato mushroom stir fry for an quick and easy meal that only requires one pan.
- 1 teaspoon oil or butter
- Place the pan over medium-heat. Add the butter or oil. Swirl the pan to coat the surface.
- Add the eggs into the pan.
- As eggs begin to set, gently mix together the egg yolks and whites. Do not stir constantly. Mix the eggs every few seconds or so. Continue cooking until the eggs look mostly set.
- Remove from heat. Serve immediately.

Heat up oil in the pan over medium heat. Use about 1 teaspoon of oil for every 2-3 eggs. I used about 1 tablespoon of oil for cooking 5 eggs. I made these scrambled eggs after cooking tomato mushroom stir fry and fluffy scrambled eggs, which explains why the pan is not clean.
After a few seconds, the egg whites will turn from translucent to white as the eggs start to set. Gently push around the eggs, mixing the egg yolks and whites. To do this, I used a wooden stirring spoon. You should not stir constantly because you want to give the eggs a chance to cook. Continue stirring every few seconds.
When you do not see any more liquid egg, turn off the heat, and serve immediately. Notice that scrambling eggs tends to leave some egg residue on the pan. I usually eat these parts because I do not like wasting egg. If you do not want egg to get stuck to the pan, try making these pan poached eggs.
