Here is yet another recipe for kohlrabi. Previously, we made pan fried kohlrabi greens with the leaves of kohlrabi. You generally don't buy vegetables for the greens, and most recipes you find will be for kohlrabi bulb. The different parts are entirely different vegetables. The kohlrabi greens are like kale, and the kohlrabi bulb is like broccoli stem.
Besides the novelty factor, there is not much benefit in buying kohlrabi. I mean, just look at it. It has purple spikes! In fact, the outer skin is incredibly fibrous. When I cooked the kohlrabi bulb, I made the mistake of not peeling thoroughly enough, so the entire dish ended up being hard to chew. Lesson learned: thoroughly peel tough vegetables.
After you get past the skin, you get white flesh that tastes like a cross between potato and broccoli. If you peeled the kohlrabi bulb thoroughly, all of the pieces should be crunchy and tender. I didn't, so there are leftover strings in about half of the pieces.
Once you're done peeling and cutting the kohlrabi, you can cook it like any other vegetable. The general pan fry method is:
- Heat oil.
- Cook diced alliums for a minute.
- Add vegetable.
- Cook until tender.
The CSA box with the kohlrabi also had spring garlic, scallions, and jalapenos, so I added those in. For an easier storebought version, you can use 2 chopped scallions.
Again, I do not recommend buying kohlrabi. The following recipe would taste about the same if you used peeled and diced broccoli stems. Broccoli stems and kohlrabi bulb are about equally hard, so the cook time for the vegetables is the same.
- 2 tablespoons of oil
- 2 scallions, diced
- 1 kohlrabi bulb, peeled and diced
- ½ teaspoon of salt
- Heat up oil in a large pan over medium heat.
- Add the diced scallions. Cook for about a minute until golden brown.
- Add in the diced kohlrabi and salt.
- Stirring occasionally, cook for 12-15 minutes until tender.
- Serve immediately. Leftovers keep well in the fridge for a few days.
Kohlrabi Bulb Nutrition Facts
Similarly to most stir-fry vegetable dishes, the calories come from the amount of cooking oil you use. It is hard to measure the exact quantity of diced kohlrabi bulb, so the nutrition is calculated for 4 cups of diced kohlrabi. Kohlrabi bulb doesn't shrink much when cooked, so you'll end up with 4 cups of pan fried kohlrabi bulb. A serving is 1 cup.
