Vegan African Peanut Stew

  • 2 tablespoons of vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 piece (1/2 inch) of ginger, minced
  • 1 teaspoon of salt
  • 1 teaspoon of cumin
  • 1 teaspoon of coriander
  • 3-4 potatoes, diced
  • 1 cup of water
  • 1 can (15 ounces) of diced tomatoes
  • ½ head of Napa cabbage, thinly sliced
  • ½ cup of crunchy peanut butter
  • 2 tablespoons of white vinegar
  • optional: cilantro to garnish
  1. Heat up oil in a large pot over medium heat. Add the onion, garlic, ginger, and spices. Cook for 3-5 minutes, stirring occasionally, until the onion is golden brown and the spices are toasted.
  2. Add the potatoes and water. Cover the pot with a lid, and cook for 12-15 minutes until the potatoes are done.
  3. Add the cabbage and tomatoes. Cover the pot again, and cook for 8-10 minutes until the cabbage is tender.
  4. Turn off the heat, and stir in the peanut butter and vinegar. Store leftovers in the fridge for a few days.
