Banana Oat Pancakes

Serves: 7 pancakes
  • 1 ripe banana
  • 1 egg
  • 1 cup oat flour
  • 1 teaspoon of baking powder
  • ½ tablespoon of butter for cooking
Oat flour
  1. Oat flour is just oats (traditional or quick) blended up into a fine powder. I prep this ahead of time and keep a container in my pantry.
For the pancakes
  1. With fork in a medium bowl: mash the banana. Beat in the egg. Add oat flour and baking powder.
  2. In a large, flat pan, heat the butter over medium heat, and distribute evenly in the pan.
  3. When the butter sizzles, you can start cooking.
  4. Use a spoon to add batter to the pan. 1 pancakes ~ 2 spoonfuls, and I get about 7 pancakes.
  5. Cook until edges start drying out. A pancake side is done when it's golden brown.
