Poached Egg Soup

  • 2 tomatoes, diced
  • 2 eggs
  • optional: ¼ teaspoon of salt
  1. Heat up a pot over medium heat.
  2. Add the tomatoes. Simmer until soft and broken down.
  3. Gently crack in the eggs.
  4. Cover the pot. Cook until the whites are solid.
  5. Season to taste, and serve immediately.
