Trader Joe's Black Bean Soup

Serves: 6 cups
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 1 carton (4 cups) of Trader Joe's black bean soup
  • 1 can (15 ounces) of black beans, drained
  • 1 can (15 ounces) of corn, drained
  • ½ cup of salsa
  1. Heat up the oil in a large pan over medium heat. Add the onion. Stirring occasionally, saute for 3-5 minutes until golden brown.
  2. Add in the black beans and corn. Cook for 5-7 minutes to brown the pieces.
  3. Pour in the carton of soup, and simmer for 5 minutes until hot.
  4. Stir in the salsa.
  5. Serve immediately. Leftovers store well in the fridge for a few days.
