Peanut Butter Custard Pie

Serves: 1 pie
  • 1 recipe of vegan oil pie crust
  • 2 cups of milk
  • 3 tablespoons of cornstarch
  • ⅔ cups of sugar
  • ¼ teaspoon of salt
  • 2 eggs
  • ¼ cup of peanut butter
  • 1 teaspoon of vanilla
  • ¼ cup of crushed peanuts for garnish
  1. Preheat the oven to 350 degrees.
  2. Blind bake the pie crust for 15 minutes to firm up the crust.
  3. While the crust bakes, make the peanut butter custard. In a small bowl, stir together the cornstarch with a tablespoon of milk until perfectly smooth.
  4. Add the cornstarch slurry, milk, sugar, salt, and eggs to a medium pot. Mix until smooth.
  5. Stir constantly, and cook over medium-heat until thickened, about 10 to 15 minutes.
  6. Stir in the peanut butter and vanilla, and set aside.
  7. Once the custard has cooled, distribute the custard in the pie crust.
  8. Bake for 30 minutes until set.
