Banana Coconut Flour Muffins

Serves: 12 muffins
  • ½ cup of coconut flour
  • 2 teaspoons of baking powder
  • 2 bananas, mashed
  • 2 eggs, beaten
  • ¼ cup of brown sugar
  • 2 tablespoons of coconut oil, melted
  • 1 teaspoon of vanilla extract
  • ½ cup of milk
  1. Preheat an oven to 400 degrees.
  2. In a large bowl, mix the coconut flour and baking powder.
  3. In a separate medium bowl, mash the bananas. Whisk in 2 eggs. Add the brown sugar, coconut oil, and vanilla extract. Stir to combine.
  4. Pour the medium bowl with the wet ingredients into the large bowl with the dry ingredients. Stir to combine.
  5. Add in milk, about ½ a cup, until the batter is smooth and creamy.
  6. To make muffins, line a muffin tin with liners. Divide the batter equally. Bake for 15-18 minutes.
