Shakshuka

Ingredients
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 teaspoon of salt
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • ¼ teaspoon of red pepper flakes
  • 2 (14 ounce) cans of diced tomatoes
  • 6 eggs
Instructions
  1. Heat up the oil in a large pot over medium heat. Add the onion, bell pepper, and spices. Stirring occasionally, saute for 5-7 minutes until the vegetables are soft.
  2. Add the diced tomatoes, and stir to combine.
  3. Gently crack the eggs into the pot over the tomatoes.
  4. Cover the pot with a lid, and cook for about 10 minutes until the eggs are set.
  5. Serve immediately.
