One Pot Mac and Cheese

  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups of milk
  • 3 cups of water
  • 1 pound (16 ounce box) of dried pasta
  • 2 cups of shredded cheddar cheese (8 ounces)
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper.
  1. Heat up the oil in a large pot over medium heat. Add in the onion and garlic. Cook for 5-7 minutes, stirring occasionally, until the onion is lightly browned.
  2. Add in the milk, water, and pasta. Stir occasionally, and cook for 20-25 minutes uncovered until the pasta is tender and the liquid is absorbed.
  3. Turn off the heat. Stir in the cheese. Add salt and pepper to taste.
  4. Serve immediately. Store leftovers in the fridge for a few days.
